The Domaine de Valmoissine is located on the site of the ancient monastery and university of Valmoissine in the village of Aups close to the Verdon gorge. It is a high altitude site and provides plenty of sunshine with cooler temperatures. This helps to ensure the grapes ripen slowly on low yielding vines, avoiding jammy flavours or too much alcohol. The wine is fermented in open vats, aged between 10 to 12 months in stainless steel. The wine has ruby hues with garnet tints and has intense aromas of raspberry and wild savoury notes. On the palate, there are notes of blackcurrant, liquorice and mocha. This wine is harmonious with ripe silky tannins and balanced acidity. Best served with grilled red meat, cheese or red fruits.
